Gaggenau’s 400 combi-steam oven series includes a sous-vide cooking function, with temperature regulated from 120 to 200 degrees F. The ovens feature an exclusive fully automatic cleaning system with fixed inlet and outlet water connections. The oven is shown paired with the firm’s 400 series vacuuming drawer, a handleless unit that enables the quick and convenient sealing of fish, meat, vegetables and fruit, not just for sous-vide cooking, but also for marinating and extended storage.
